Baked chicken with potatoes
A good roast chicken, well grilled, cooked with tender and delicious potatoes, thyme to enhance your dish, garlic for the little taste of the Mediterranean, and you're in paradise for gourmets! INGREDIENTS:
* 1 farm chicken
* 12 potatoes
* 4 garlic cloves
* 2 sprigs of thyme
* 3 c. olive oil
* 1 knob of butter
* 1 glass of water
* salt, freshly ground pepper
PREPARATION:
* Preheat the oven to 210 °, then peel the onion and garlic, cut
the onion into 4.
* Peel the potatoes and cut them into large dice.
* Put the dissociated chicken in a baking dish, add salt, pepper
and Provence herbs.

* Brush generously with olive oil and pour a little into the bottom
of the dish, add a glass of water.
* Add the onion, garlic and potatoes.
* Roast in the oven for about 2 hours, basting regularly with the
cooking juices and turning the chicken and vegetables halfway
through cooking.
* Add a little water if the juice has evaporated too much.
* 15 min before the chicken has finished cooking, wash the
watercress well, remove the large stems.
* Blanch it for 4 minutes in boiling salted water, then drain and
pass it quickly under cold water
* Wring it out and mix it.
* Return the chopped watercress to the pan and cook for a few
minutes over low heat.
* Add the cream, mix.
* Serve hot.

Tips:
To roast a chicken well, there are, as often in the kitchen, different schools. Depending on the taste, some will prefer to leave the chicken as it is, with just a drizzle of olive oil. Others will prefer to brush the chicken with mustard or soy sauce. You can also add tomatoes in quarters, which will cook with the potatoes, or even other vegetables such as zucchini, peppers ... 1000 possibilities, for a delight!
